I've never been to the gunks but I'm considering it when I come to the US. I would like to do a trail that involves hiking and rappelling spots (no climbing). Is there any?

This is probably a troll but I am bored so here goes. No, there is nothing like what you are looking for. There are many wonderful and beautiful hiking trails but sport rappelling is not a recognized activity at the Gunks. For what you want try the canyons of Utah.
If you just want to hike then you will have a spectacular time. The trails at the Gunks are well thought out, meticulously maintained, and have beautiful views.

no, we pretty much just make fun of sport rappellers.

most of the slots i've been through in utah that require rappelling also require a bit of climbing and sometimes swimming too.

In general, the type of routes (or "trails") that you are inquiring about don't exist in the states. There are only a handful that can even be vaguely classified as almost-Via Ferrata (or Klettersteig) routes.

Over here in Israel, rappelling is very widespread. There are hundreds of hiking trails that end in rappelling from multiple cliffs from as low as 15M to 150M. It's great because if you bring a long a group, they only need to know basic rappelling which can be taught in 5-10mins. IThis is why tourists usually go on one rappelling trip when they come to israel. I was just thinking that there might be something similiar in the NY area in the states as I will be going there for the spring or summer.

The eastern US is geologically and climatically very unlike Israel. As others above hinted, the semi-arid West is your best bet.
