I was there with an OUTSTANDING guide, named Peter, interestingly enough, last year. He had just about every cam. nut, tricam and slings galore. What would I need to get by SAFELY... I want to take my 14yr old for some easy top roping.

Unfortunately, setting a 3 or more piece TR anchor may require a full lead rack, as you are often using a crack system with a similar width through-out the useable section. This would require several pieces of solid gear in the same size range. You might find places where that is a couple of solid nuts and a cam, but Murphy tends to require at least two good cams and maybe more of the same size.
There are a couple of spots along the top of Peterskill where two bolt anchors have been placed, such that you only need two slings or a cordelette to extend the master point/biner(s) past the lip of the top. I would recommend all biners in that case be locking ones. You seem aware that trees are off limits for anchors at Peterskill. Good luck and enjoy.

100ft. of static rope and 3-4 locking biners. Not all trees are off limits in Peterskill. Just stay away from pine trees and you'll be fine. You can also sling boulders on top of the cliff.

would you recommend trapps or near trapps over peters kill for my 14yr's intro to TR ???

where is is easer to anchor of the 2???

No, Peterskill all the way for top rope. You can access the top safely, you don't need to lead anything. A lot of the popular routes have bolts up top. Also, if you go on a weekend, you might be able to join a group that's there and you can climb a lot more lines.
