If you go to Grounds for Sculpture, definitely make dinner reservations at Rat's! Never been on the hiking trails at Allamuchy, but Ramapo Reservation is pretty in the wintertime.
Note that GfS and Ramapo are like, two hours away from eachother, though. Sourland Mountain Preserve is closer to Hamilton and also pretty in the winter. Lambertville and New Hope (in PA, but just across the river) are both fun little towns. I think Peddler's Village (in Lahaska, a bit past New Hope, also in PA) probably is decorated really nicely for the holidays too.

Christmas Day there is a re-enactment of the colonials crossing the Delaware at, of course, Washington's Crossing State Parks.

Washington's Crossing should be within 10 miles of you, then. I've never been into watching a re-inenactment but watching the British invade Kingston this year was pretty fun, especially with all the negative comments from the crowd for the redcoats!

The Bent Spoon?
Thomas' Sweets in Palmer Square has the best ice cream in the world. They make their own and they invented blend-ins. Check it out for dessert after a lunch/dinner at The Ferry House on Witherspoon St. off Palmer Square.
When you're at the Grounds for Sculpture, consider Chambersburg in Trenton for food. It has some of the best Italian restaurants outside NYC.
A day in Lambertville (Woodstock on the Delaware), a day in Princeton, a day in Trenton (galleries/museums and the Revolution Christmas Eve Battle walk).
Good to go.

Bent Spoon also makes their own ice cream and sorbet, from local (and organic, if they can get it) ingredients. They have innovative flavors like Jersey sweet corn, cardamom ginger, and cranberry mostarda. IMO, THEY have the best ice cream in the world. You can always visit both and do a head-to-head taste test!
